It's all a little bit overwhelming. But, if you want to get to know this fruit a little bit better and add it to your culinary repertoire, summer is the time to do it. Eggplants are in season from July through October but are known to strut their best stuff in August. Globe or American varieties—the standard eggplant size, shape, and color you're likely used to seeing—are great to grab during this time.
