My brain, even with just half a cup, burst back to life. I made stock with my vegetable scraps and started a loaf of bread with100% regional grain beerAndrea's 100% local meal with Susy Jones of hake, potatoes, rainbow radish, purple daikon, shallots, egg and ramp dressing.
Neat article, and important convo. I love eating local! That America wastes like 30-40% of food and we know about horrific conditions throughout the industry (esp. meat) tells me we’ve been doing things ass-backwards for a long time now. Yes, regional food networks would save $$$
Problem with this is 50-100 years ago people would have been growing more food locally. There wasn't giant corporate farms hundreds of miles away. Lots of people had garden patches.
